Risotto alla Milanese
Serves 4
Ingredients:2 cups chicken broth
8 cups Chablis wine
1 cup arborio rice
2 cups diced and peeled shallots
4 oz. butter
1/3 tsp. saffron powder
2 cups grated Parmesan cheese
Olive oil
Salt
- Preparation:
Sauté shallots in olive oil on medium heat Add arborio rice and stir for two minutes Add wine and continue to heat until wine is absorbed Gradually add chicken broth and stir constantly When rice is fully cooked, remove from heat Stir in saffron, parmesan and butter Salt to taste.
